Cardamom is a member of the ginger family and follows saffron and vanilla as the world's most expensive spices. Cardamom has a very pleasant aroma and taste. Cardamom is broadly grouped into two categories, namely small cardamom (chhota elaichi) and large cardamom (badi elaichi). The Cardamom is available as whole dried pods, loose seeds or whole or ground seeds. Cardamom is best stored in pod form, because once the seeds are exposed or ground, they quickly lose their flavour. Cardamom oil is a precious ingredient in food preparations, perfumery, health foods medicines and beverages. Cardamom has slightly sweet and savory flavor allows hence can be combined with both sweet and savory dishes. In Indian cooking cardamom forms one of the main ingredients of garam masala and curry powder. Cardamom can be used in sea food, sauces, meats, poultry, vegetables, desserts, pastries, and other baked goods.
