Turmeric has bright yellow colour hence it is called Indian Saffron. Turmeric is obtained from the root of Curcuma longa, a leafy plant in the ginger family. Its flavor is sweeter and more delicate than ginger. Turmeric is used in curry powder and other spiced dishes and as a spice on its own. It can be found as a natural coloring in prepared chicken or vegetable stock. Turmeric appears in pulaos, pickles, savouries, fruit drinks, cakes and jellies. Western cuisine does not use turmeric directly, but it forms part of several spice mixtures and sauces. It is also used to impart a bright yellow colour to mustard paste. Turmeric is employed as colouring material in pharmacy, confectionery, rice-milling, food industries, and paints and varnishes industry. Turmeric is also used to manufacture various sunscreen, fairness creams and lotions.
